III. Properties: At room temperature, it is a yellow to amber-coloured, viscous, oily liquid. It is soluble in ethanol, ethyl acetate, petroleum ether and toluene; it is insoluble in cold water but dispersible in hot water. It possesses emulsifying, stabilising, lubricating and thickening properties; it is a W/O-type emulsifier with an HLB value of 4.3.

V. Uses: It can be used in food as an emulsifier.
